Blighia sapida commonly known as ackee is the national fruit of Jamaica.  Originating in West Africa it was brought to the Caribbean and utilized as food for the enslaved peoples.  It is often prepared with saltfish (salted codfish) and served with breadfruit for a wholesome and delicious breakfast.  Knowledge of the fruit is essential for those who prepare it, as ackee is poisonous if picked and eaten too soon. The original piece was created on paper with sepia ink.  It is meant to capture the elegance, beauty and strength of  those who in the midst of pain transformed what they had into a delicacy that sustains.
